Vinification: Grapes harvested early in advance are severely selected and pressed whole, so only the seedlings are first decanted in cold and then inoculated for alcoholic fermentation. The fermentation takes place in low temperature steel. The wine is aged for 4 months and lasts at least 2 months in the bottle.
Organoleptic characteristics:
Color: light pink with copper reflexes.
Fragrance: soft aromas of red fruit, cherry and strawberry, with obvious mineral notes.
Flavor: fresh, round, medium persistent.
Gourmet Matches: Excellent with crustaceans, mozzarella and fresh potato
from Agerola. Great as an aperitif.
Piedirosso vine: A red grape variety most cultivated on Mount Vesuvius is known by the dialectical term “Per e Palummo”, which describes a morphological characteristic of the rachis that sees the pedicels of colored grains of red as those of a paw of dove. Very vigorous vine, with late ripening with yields are very low. Medium size of bunch, generally spatula, medium-large grapes, spherical with large purple violet skin.
