La Busiata is a type of long maccheroni, originating in the province of Trapani, and typical of Calabria and Sicily. They take their name from busa, the Sicilian word for the stem of ampelodesmos mauritanicus, a local herb, which is the main ingredient used to prepare them and give them their helical shape
